On this episode of Baro in the City, Chef Steve Gonzalez shows you how to make the perfect BBQ Chorizo Burger…with fresh Chipotle Mayo! For this recipe you can purchase & break down raw Chorizo sausage links and hand-pack your patties…OR you can make this fresh Chorizo using this recipe:
- 2.5 lbs of ground pork
- 40 grams of smoked paprika
- 10 grams of hot paprika
- 20 grams of cumin
- 5 grams of kosher salt
- 1/4 bunch of cilantro
- 1/4 bunch of parsley
- 1 shallot
- juice & zest of 1 orange
combine all ingredients into a large bowl, mix & firmly pack into 4oz patties.
