The Best Homemade Pancake Recipe From Chef Steve Gonzalez

Have you ever tasted a delicious menu item at a restaurant and wondered how you could create the same thing in your kitchen at home? Well to celebrate the launch of #BaroBrunch, Executive Chef Steve Gonzalez & Baro Partner, Michel Falcon, hosted the below video to teach you how to make the best homemade pancake recipe at home! This delicious hotcake recipe serves four and is topped off with savoury queso fresco, guava and butter-cooked plantains! Enjoy.

Here’s what you’ll need:

3 Cups All-Purpose Flour
7 Tsp. Baking Powder
2 Tsp. Salt
2 Tbsp. Sugar
2 1/2 Cups Milk
2 Eggs
6 Tbsp. Butter
4 – 5  Queso Fresco Slices
2 Plantains, sliced
Fresh Guava Paste

Hotcakes Method:

In a large bowl, mix dry ingredients: Flour + Baking Powder + Salt + Sugar. In a separate bowl, mix the wet ingredients: Milk + Eggs + Melted Butter. Pour wet ingredients into dry ingredients and mix until you have a consistent batter.

Let the batter sit for 3-5 minutes to thicken. In the meantime, preheat your stove top to medium-high heat. Place a cast iron pan on your stove top and lightly coat with oil.

Pour the pancake batter into the heated, cast iron pan. After a couple minutes, check the underside of the pancake and if it’s a nice golden-brown colour you can flip it to cook the other side.  Once you’ve flipped the pancake, add strips of Queso Fresco and Guava to each one and allow to gently melt. Remove pancakes from heat and stack on top of each other on your serving plate.

Butter-Cooked Plantain Method (Topping):

In a medium-size saucepan, melt a couple cubes of butter on medium heat. Slice your plantains to the thickness you prefer (we recommend 1/2 inch to an inch) and toss them into your melted butted. If the plantains are starting to fry, add a little oil to the pan to prevent browning. Add a pinch of salt to taste. Once the plantains are 3/4 of the way cooked, add a generous amount of honey (about 1 1/2 tablespoons). Once the plantains are fully cooked and soft, remove from heat and pour over your pancakes
